Quiche With Herbs And Mexican Cheese

This is a delicious and very tasty quiche recipe enhanced with some flavorsome Mexican cheese.
 
What you'll need:
  •  
    1. Enough quiche pastry to line a large quiche dish.
    2. 3 cups grated Mexican cheese . If this is unavailable then Swiss, Cheddar, or Mozzarella are all good.
    3. ½ cup Ricotta Cheese
    4. 6 large eggs
    5. 1 cup of half’n’half, or a your preffered combination of milk and/or cream
    6. 1 medium onion diced finely, or mincd
  • Desired combination of herbs - I use the following fresh herbs if I have them, but can substitute for dried:
    1. 3-4 decent sprigs of parsley
    2. Dill
    3. Marjoram
    4. Thyme

  • How to make it:
  • Preheat oven to 400 F.

Place prepared quiche pastry and push down firmly, especially around the edges.

Sprinkle grated Mexican cheese evenly inside.

Place ricotta, eggs, half’n’half, and herbs into a blender. Blend on high for 2 minutes and pour into the quiche dish, over the pie crust..

Bake at 400F for 40 – 45 minutes. Quiche should be firm and lightly browned on top. 

Cool quiche for at least 10 minutes before serving with your favorite salad.
